Carlos Salgado has had an excellent training, having worked with great chefs such as Daniel Patterson at Coi in San Francisco.
His cuisine is very precise and represents one of the best expressions of Mexican-American fusion. His culinary palette is most evidently influenced by chefs like Enrique Olvera and by New South American Cuisine; some Japanese-Angeleno influences are evident too. Salgado can contribute in a very substantial way to the evolution and modernization of the so-called “Chicano cuisine”.
His Taco Maria is a very enjoyable table, it’s absolutely worth a visit from any corner of Southern California.
